Chunky Guacamole

What better way to enjoy a ripe avocado than a big bowl of guacamole?

I call it “chunky”, because that’s what it looks like to me! I’m not a fan of the whipped, pureed, or whatever you want to call it, guacamole. I don’t know what it is, but no matter how many times I try it, I just cannot like it. It looks prettier this way, too ;)

Mmmmmmmmmm!

Ooey-Gooey-Chewie Grain-Free Brownies. It’s a long name for a recipe because that’s what it takes to describe them … they are the ooiest, gooiest, chewiest brownies I have ever made, and best of all: their grain-free! Double score!

I know how good my recipes are based on the “mmmm” factor. The number of times my husband says “mmmm” while eating one of my recipes lets me know how much he likes it. This one definitely has the mmmm factor going on!

Homemade Whole Wheat Tortillas

We love tacos. LOVE. I can’t even explain how much we love them. They have been known to make the menu multiple times a week at our house. I guess that’s what happens when your husband is from Mexico!

Since we try to stay healthy, we’ve always bought multi-grain or whole-wheat tortillas unless if it was a “special” occasion and we were making authentic homemade Mexican enchiladas (a post to come!). Still, even the healthier store-bought tortillas have preservatives and who knows what else added to them. When my hubby said we needed to give up bread and tortillas, I had a momentary freak-out. Except … it wasn’t just for a moment. I think I was cranky for a few days!

Luckily, giving up flours was just for a 21-day cleanse that we did, but even still, once we were allowed to eat them again, we were both a lot more conscious of what we were eating. So, off I went researching how I can make the healthiest tortillas from home. And here we are!
