
I don’t remember life without our Vitamix. It’s been just two short months that we’ve had her, but she is such an integral part of our daily lives that life without her seems unimaginable.

No, but really! This thing is amazing, and one of my favorite foods to make in it is nut butter. Most of the time, we make Pecan Butter…and then the pecan butter turns into grain-free cookies, brownies, and more! Pecans just happen to be our favorite nut, but you could make any type of nut butter in the VitaMix. If you don’t have a high-powered blender, you could try using a food processor, but I’ve never done this myself.
Fill the VitaMix to the 2 1/2 cup line with Pecan Meal
Note: For making nut butter, I use Pecan meal because of the cost-factor. I can get a 1 lb bag of halves from the local Pecan company for $10.95, or I can get a 3 lb bag of meal for the same price. Halves, pieces, or meal will all make a wonderfully-flavored Pecan Butter! If that’s what you’re using, use approximately 2 cups of halves or pieces to make 1 cup of butter.

It’s going to take about 1 minute to get it to a creamy consistency. This is what it looks like half-way through.

You could make it even creamier by adding a little oil, but I think this would only really be necessary if you wanted it to be spread-able. It’s a little thick without the oil, but that works fine for me because it always gets made into some kind of baked good around here!
