
One of my favorite cookies of all times is a lemon cookie that I used to buy from a certain brand (that I cannot remember the name of). Several years ago, they quit making them … or the store I would buy them from quit carrying them. Whichever it may be, I have been craving those little things ever since then!
I’ve looked up recipes for lemon cookies, but it seemed that every one I came across used boxed cake mix or pudding mix. I really don’t like using pre-mixed or pre-made items when I cook or bake. What’s the point of calling something homemade? Not to mention all of the additives and preservatives in these boxes. But anyway, these little cookies are different from what I used to get at the store (those weren’t frosted & were more of a shortbread), but these are pretty darn good in their own right. The frosting is harder when cold, so it’s easier to stack them for storage. And personally, I think they taste better cold!
